Here's a lovely recipe that didn't stay on our menu for very long a few months ago. Enjoy a vegetarian version of the famous butter chicken, marinated tofu, for a most surprising result, with its homemade sauce of garam masala spices, Greek yogurt and tomato paste. Served with rice and vegetables of the moment.
Ingredients: extra-firm tofu, rice, edamame, bell bell pepper, butternut squash, garlic, homemade vegetable broth (onion, carrot, celery, bay leaf, ginger, garlic, parsley), Greek yogurt, tomato paste, butter, flour, garam masala spices, turmeric, canola oil salt, pepper.
